In recent years, chefs and food writers have pushed back against the stigma, reclaiming MSG as a legitimate, even celebrated, ingredient. High-profile restaurants have begun using it openly again, and grocery shelves now carry branded jars alongside sea salt and spice blends. This shift reflects a broader trend toward re-evaluating “processed” as a blanket negative, recognizing that processing exists on a spectrum.
